Overview
These qualifications are designed for learners with an interest in food and cookery and a career in the food production industries. Learners are provided with experience throughout the course with using different cooking skills and food production methods which learners can use in further education and apprenticeships.

How will I learn?
​
Students will form part of the catering team at Woodpecker Court taking on active roles in the provision of preparing, cooking and serving lunch for the whole site as well as helping with catering events that Woodpecker Court undertakes. There is also the opportunity to become involved with the ever developing Community Café which forms part of the L2 course. Kitchen learning is also supported by being taught in the classroom to deliver essential theory which underpins and cements the practical kitchen learning.

What will I learn?
​
Learners will be required to successfully complete several units. For both levels there are three (3) mandatory units:
Unit 101 Maintain a safe, hygienic and secure working
Unit 104 Work effectively as part of a hospitality team
Unit 203 Maintain food safety when storing, preparing and cooking food
Level one (1) students are then required to successfully complete a further three (3) units:
Unit 115 Prepare vegetables
Unit 120 Prepare and cook meat and poultry
Unit 121 Prepare and cook pasta
Level two (2) students are then required to successfully complete a further ten (10) units:
Unit 110 Provide a counter/takeaway service
Unit 143 Produce basic egg dishes
Unit 144 Prepare meals for distribution
Unit 234 Prepare and cook food to meet the requirements of allergy sufferers
Unit 282 Produce basic meat dishes
Unit 283 Produce basic poultry dishes
Unit 288 Produce basic rice, pulse and grain dishes
Unit 289 Produce basic pasta dishes
Unit 293 Produce basic hot and cold desserts
Unit 296 Produce healthier dishes

How will it be delivered?
​
These qualifications aim to develop or confirm the skills and knowledge of those who aspire to be employed in hospitality roles including chef, school cook or chefs’ kitchen/food assistants.
The objectives of this qualification are to help learners to:

Prepare to work in the hospitality industry and undertake as range of duties in a range of different areas

Consolidate their existing skills and knowledge within a food production/cooking role

Learn how to adapt themselves for the clientele around them in their recipes

Learn safe working practices when dealing with ingredients and equipment and how to work as part of a team
